Wines of Substance is the brain child of the people behind Waters Winery and Gramercy Cellars, aimed at bringing great wine to the table in an approachable, affordable way. Dive in with the 2007 Merlot – a classic, feminine expression of the grape. Intense herbs meet leather and red plums on the palate, with a smooth, round mouth feel. This soft, expressive wine is a perfect accompaniment to the fluidity and reflective melodies of “Insensitive”. Other great tracks to pair the Merlot with: the lilting “Iris” and the dreamy “Estate”.

Pop the cork on the 2007 Syrah to be met by smoky aromas and bold flavors of black and blue fruit with that hint of meaty goodness that makes Syrah so bombastic. The obvious pairings for this meaty wine would be the more pyrotechnical pieces on “Virtue”. The opening track, “Exposition” is a perfect example, with an impressive saxophone solo sparring with Eldar’s prodigious piano just as the jammy fruit flavors in the 2007 Syrah spar with the smoky, mineral qualities that come from the wine’s impressive terroir. The Syrah also shines when paired with “Blues Sketch in a Cave” and “Blackjack”.

The 2007 Cabernet Sauvignon is, as the winemaker puts it, “full bodied, red blooded American Cabernet.” With bold aromas of cedar, cigar and mocha, your mouth will be watering before you even put the glass to your lips. Savor the ripe cassis, blackberry and plum flavors over the throbbing rhythms of “The Exorcist” for the ultimate sensory overload. Equally delicious pairings include “Long Passage”, “Daily Living” and “Vanilla Sky” (do I get a hint of oak?).
